Cooking Healthy: One Pan Meal

Eating healthy has come along way. Sprouts, water and other foods that are considered, shall we say, not very tasty, are no longer the only option! I'm sure you have seen nutritional programs that offer meals that great tasting and make you feel like you are not missing out on anything. And I'm sure that they are great, but you have to pay a monthly fee to join and sometime you have to pay for the food as well. So if you are looking for some budget friendly ways that will keep you on track, then keep reading as I share a scrumptious recipe that you and your family will love! Added bonus: It is a one pan meal, so less cleanup!


Roasted Chicken & Veggies Recipe:

This recipe is super simple and quick! I made it for my family and it was a huge hit! My nephew has even asked that I make it again! I recently had a TS event on Facebook and went live a few times there. I will post the links here, but please keep in mind, I am NOT a professional, as you will see! LOL


I did my best and I am sure with practice, I will get better. I hope! So here is the video of me prepping the meal. I pre-prepped as a freezer meal, but as you will see, I did not allow enough time for it to thaw before I hit the "Go Live" button. (Insert eye roll and head slap here! )


So after I let it finished thawing, I was able to put it in the over and let it bake for 20-30

minutes. I have to say, I was pretty proud of myself. It even kinda looked like the professional product photo. What do you think? Oh, and you know, I am all about saving time, so I used frozen veggies, the California style. Why chop and mince when it is already done for you? I only used one bag as I had a separate bag of broccoli. Here is how it looked when I took it out of the oven. And as you may have noticed, I looked awesome and glamorous. Not!!! I think that when I make it again, I will use 2 bags in addition to the broccoli as the veggies are the stars in this dish. And as I mentioned earlier, my nephew really loved this recipe and asked that I make it again. He is 18 and if he wants this healthy dish instead of take out, who am I to argue? My family let me record their review, so take a look at what they had to say. And this is the last video I am going to torture you with, I promise!
